This will be my first CNC so I'm not sure how all of this works. I see there are shuttles into towns each night for dinner, etc. Do most people lock their bikes to something in camp or is theft just not an issue?
Also, do folks leave their bikes outside while they are in their tents sleeping -- even when it's raining?
Jim, I haven't heard of theft being a big problem, but it seems that most people do fasten their bikes to fences, posts, other bikes, etc. There will be plenty of space to cinch up your bike if you decide to. As far as keeping the bikes in the tent, I'd say most folks don't have room enough for themselves, their gear and the bike. A lot of people put plastic over the seat so at least the seat is dry when you start off in the am. At most locations, there is some indoor camping and you may be able to find a spot for your bike indoors if you so desire. Anyway you slice it though, you are in for a big time. Enjoy!
Bike locks would not be a bad idea for your peace of mind if nothing else. On last years ride I left my bike unattended at the rest stop at Chimney Rock for a couple of hours to take the tour up to the top of Chimney Rock and left my bike outside the gym for three very rainey nights and had no problem. During the nice weather, I just set my bike next to my tent, covered the saddle and went about my way of having a good time.

I bring a VERY light-weight combination cable lock. It provides peace of mind when I stop in a town along the route or leave my bike at my tent. It's most likely completely unnecessary, but it was pretty inexpensive (for a Kryptonite) and it's very compact and light weight. I also keep my bike inside the rain fly of my tent in case of rain.
